3 eggs
1/4 c. brown sugar
1/2 c. buttermilk
1/2 c. water or milk
1/4 c. brewed coffee
2 1/2 c. unbleached white flour
1/2 tsp. salt
1 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. ground cloves
1 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
4 T. melted butter or margarine

Directions:
Directions:
Cream together the eggs and brown sugar. Add the buttermilk, milk and coffee.

Sift together the flour, salt, baking powder, baking soda and spices. Combine all ingredients and add the melted butter.

Cook on a griddle as you would any other pancake. Makes about 3 1/2 c. of batter, or 8-10 pancakes.

Serve with maple syrup, honey or molasses.
