2 tbsp. butter
3 tbsp. flour
3 c. milk
1 medium onion, chopped
1 whole clove
1/4 bay leaf
pinch ground nutmeg
3/4 tsp. salt
1/8 tsp. black pepper

Directions:
Directions:
Melt butter in heavy saucepan over medium heat and whisk in flour, Increase heat to medium high and whisk in 1 cup of milk. Keep whisking until consistency of mashed potatoes. (about 2 minutes.) Add another cup of milk and continue whisking until thick and creamy with no lumps (about another 2 minutes.) Whisk in remaining cup of milk until all combined.

Add onion, clove, bay leave and seasoning. Bring to a boil, whisking frequently. Reduce heat and simmer whisking frequently for about 15 minutes. Be careful sauce doesn't start to turn brown. Stir and strain through a wire mesh into a bowl.. Place buttered side of waxed paper over the top and let cool.

Personal Notes:
Can be used as a base for many dishes. Just add parmesan and garlic for a creamy pasta sauce. Also a great base for Mornay Sauce. Recipe is in the book.
