5 1/2 c. cooking apples( like Braeburn or McIntosh)
1 tbsp. lemon juice
1/2 c. sugar
1/4 c. light brown sugar, firmly packed
3 tbsp. flour
1/4 t. salt
1 t. ground cinnamon

Peel apples and grate into large bowl.
Add remaining ingredients and stir until well mixed.
Make pie crust recipe for bottom crust, place in pie plate, poke holes in bottom with a fork.
Make pie crust recipe for top crust.
Pour apples into the pie plate.
Add the top crust, crimp and flute edges, cut vent holes in the top crust.
Bake at 425 º for 15 minutes, then 350 º for 45 minutes.

Add 1 to 3 more apples for a very plump pie and 1/4 c. more sugar.
Add 1-2 Granny Smith apples for a pie that is more tart.
Place a cookie sheet on the oven shelf below the pie to catch any drippings.
Use a crust protector to prevent dark crust.
