1-1/2 C frozen corn kernels, thawed
1 medium tomato cut into ¼ inch chunks
1 15-oz. can black beans, rinsed and drained
1 C finely chopped red onion
4 garlic cloves, minced
1 fresh jalapeno pepper, seeds removed and finely chopped
Juice from 2 limes, about ¼ cup
2 tsp. ground cumin
¾ tsp. salt
¼ tsp. pepper
¼ cup chopped fresh cilantro

Directions:

Combine corn, tomatoes, and black beans in a large bowl.

In a separate bowl, mix together all remaining ingredients except cilantro. Pour over corn, tomato, and bean mixture and blend well.

Refrigerate 2-3 hours to allow flavors to blend. Serve at room temperature. Add cilantro just before serving.
