3 T. vegetable oil
3 celery stalks, chopped
1 onion, chopped
1 green pepper, chopped
8 garlic cloves, minced
4 14-oz. cans tomatoes, stewed, Mexican style
2 16-oz. cans Pinto beans, drained
1 15-oz. can hominy, golden, drained
1 12-oz. can corn, drained
1 4-oz. can green chiles, diced
1 cup fresh cilantro, chopped
¼ cup chili powder
1 T. ground cumin

Directions:
Directions:
Saute garlic, onion, and pepper in oil until softened. Add remaining ingredients and simmer for 30 min to 1 hour. Serve with sides of chopped red onion, shredded cheddar, and sour cream. (12 servings)
