1 cup quinoa (uncooked)
2 large eggs, lightly beaten
1 cup chopped onion (or a mix of chopped onion and chopped bell pepper)
1 cup shredded mozzarella cheese
2 tsp minced garlic
2 Tbs dried basil
1/2 cup chopped pepperoni (or 1/2 cup cherry tomatoes for a vegetarian version)
1/2 tsp salt
1 tsp paprika
1 tsp dried oregano

Pizza sauce (for dipping sauce)

Directions:
Directions:
1. Put quinoa and 2 cups of water in a medium saucepan. Bring to boil, reduce to simmer. Cover and simmer for 20 minutes.

2. Preheat oven to 400 F. Mix together all ingredients except pizza sauce.

3. Spoon mixture into greased mini-muffin tin. (Makes 24.) Pack mixture down into each muffin cup.

4. Bake for about 20 minutes, or until the quinoa bites are golden brown. Cool for 10 minutes before removing from pan (or else they'll fall apart).
