1 large Idaho potato (per person)
2 c. buttermilk
2 c. flour
1-2 T black pepper
salt to taste
Canola oil (peanut oil is better tasting, but canola oil is better for you)
Hyde Park Bar & Grill Dipping Sauce (see below)

8 c. mayonnaise
1 c. jalapenos
1 c. green onions
1 T. celery seed
1 tsp. dry mustard
1/8 T. cayenne pepper
(for less sauce, you can cut these portions by half)

Directions:
Scrub to clean the skin of a large Idaho potato. Do not peel. Slice into good-size fries.

Place potato slices into a bowl filled with the buttermilk. Toss a few slices at a time in flour mixed with black pepper. Fry in hot canola oil 2-3 minutes or until done. Drain on paper towels. Eat with copious amounts of Hyde Park Dipping Sauce.

Hyde Park Dipping Sauce
Puree jalapenos and onions in blender or food processor.

Place mixture in mixer bowl. Add remaining ingredients and beat on low speed for 5 minutes. Makes 8 cups.
