4 boneless, skinless chicken breasts
1 c. salsa (must be bottled, not the fresh kind)
1/2 package taco seasoning
1 can reduced fat condensed cream of mushroom soup
1/2 c. sour cream

Lightly spray the crockpot with Pam. Put in the chicken breast and sprinkle the taco seasoning over them. Mix salsa and soup, pour over chicken. Cook on low for 6 – 8 hours. Remove from heat and stir in sour cream. Serve!

1) I’ve gone crazy and used the whole package of taco seasoning, and it’s good that way. 2) You can use reduced sodium taco seasoning, and that works fine. 3) You can substitute lowfat or fat-free sour cream with no problem. 4) You can choose to add a can of drained black beans OR a can of Mexi-corn (drained) about an hour before this is done for variety 5) With leftovers, shred the chicken and serve as soft tacos, using leftover sauce 6) The leftover chicken, shredded and stuffed in a tortilla with leftover sauce and cheese sprinkled over makes a darn good and easy enchilada. 7) You can easily double this recipe, and you’ll want to double the sauce for sure! It’s easy and so good.
