2 bell peppers
2 cloves garlic
12 oz green or yellow beans
2 tbsp balsamic vinegar
2 tsp Dijon mustard
2 tsp maple syrup
1/2 tsp salt
2 tbsp olive oil
1/3 cup pine nuts

1. Preheat oven to 400 degrees F or use the grill
2. Start with four 20-24 inch long pieces of parchment paper (oven) or foil (grill). Fold in half crosswise. Draw a half a heart on one side (think Valentine card). Use scissors to cut out the heart shape. Open up the heart.
3. Mix the oil, mustard, syrup, garlic and salt in a large bowl. Add the beans and peppers. Toss
4. Place about a cup of the mixture on one side of each open heart fairly close to the crease and leaving at least a 1-inch border around the edge for folding. Sprinkle with pine nuts.

Close the packet to cover the ingredients. Seal the packet by folding the edges together. Twist the tip of the packet and tuck it underneath to help keep the packet closed. Place the packets on w large rimmed baking sheet. Bake until the vegetables are tender, about 15 minutes. Let packets test unopened for 5 minutes. If grilling, grill over medium heat for 10 to 12 minutes, rotating the packets halfway through. Drizzle the vegetables with balsamic vinegar before serving.
