1 1/4 cups wheat flour
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground nutmeg
1/4 tsp cinnamon
1/2 tsp salt
1 cup old-fashioned rolled oats
1/2 cup Craisins (or raisins)
3 Tbs oil (canola, vegetable, or olive)
1 large egg, lightly beaten
1/3 cup milk
4 medium carrots, shredded
1 medium banana (very ripe), mashed

Directions:

1. Preheat oven to 375 F and spray a 12-cup muffin pan with non-stick spray.

2. Whisk together flour, brown sugar, baking soda, baking powder, nutmeg, cinnamon, and salt.

3. Add oatmeal and Craisins to dry ingredients and stir.

4. To the dry ingredients, add oil, egg, milk, carrots, and banana. Stir until just blended. Don't over mix.

5. Put batter in muffin tins. Bake until a toothpick inserted into the muffins comes out clean. This takes 20-25 minutes.

I love these muffins warmed up in the microwave with a little bit of butter.

Note: The cook temp and time of these muffins seems to vary greatly depending on altitude and ovens... if it takes way longer than 25 minutes to cook your muffins, you can try to increase the temp to 400 F next time (which is what the original recipe said). For me, 400 F is too hot and the outside burns before the inside cooks.
