1 lb. ground beef
1/2 lb. Italian sausage
5 cloves minced garlic (to taste)
1 chopped onion
1 Tbsp. salt
1 Tbsp. garlic salt
2 Tbsp. crushed rosemary
1 Tbsp. chili powder
1 tsp. oregano
1/2 tsp. pepper
6 -6 oz. cans tomato paste (Italian flavored works well)
1 jar spaghetti sauce
10 c. hot water
approx. 27 lasagna noodles (cooked and drained)
3 lb. cottage cheese
3 lb. grated mozzarella cheese

In a 'large- high sided' frying pan, fry ground beef and sausage until almost done then add onion and garlic and continue cooking until onion is soft. Mix in seasonings. Add tomato paste, water and spaghetti sauce. Stir until tomato paste is blended in. Simmer uncovered 30 mins until sauce has reduced some. Turn off heat and let sauce cool for about 15 mins. Now it's time to build the lasagnas. This recipe makes enough for 3 -9x13 pans. Put a thin layer of sauce in all of the pans. Then make layers as follows: noodles, sauce, cottage cheese, and mozzarella. There should be enough for 3 layers in each pan. Save enough sauce for a little on the top of the last layer. Note*, sometimes the sauce bubbles over a little so make sure there is some foil on the bottom of the oven. Bake covered at 350º for 90 mins and then uncovered for 30-45 mins or until the middle is bubbling. Take the pan out of the oven, cover the lasagna and let it sit for 10 mins before cutting.

It takes some practice to get the right amount of sauce, cottage cheese and cheese in the layers so that you have enough for all of the lasagnes. The prep time is quite long for this, so that's why I make 3 pans at a time. I cook the ones we are going to eat and then I freeze at least one for a dinner down the road. Freeze it before you cook it. It's a family favorite! I've tweeked it so much that it doesn't resemble the original recipe at all!
