4 lbs of chitterlings
1 1/2 cup of all-purpose flour
1/2 cup vinegar
Salt and Pepper, hot sauce, crushed peppers
2 cups of water
Corn oil for frying

Directions:
Directions:
Clean and boil chitterlings in water, vinegar, salt, pepper, crushed peppers until done.
Cut chitterlings into strips and lay aside on towel to pat dry.
Mix your batter with flour, salt and pepper and water to a thin to medium consistency to batter the chitterlings.
Get your pan and grease hot. Drape chitterlings in batter and drop in hot grease for about 3 min. Remove and drain.

Sprinkle hot sauce, and a little vinegar over the chitterlings before eating. Some potato salad, greens and corn bread. You got a real meal.
