Ingredients: 4 oz. package German Sweet Chocolate 1/2 c. boiling water 1 c. butter or margarine 4 egg yolks 1 tsp. vanilla 2 1/2 c. sifted cake flour 1 tsp. baking soda 1/2 tsp. salt 1 c. buttermilk 4 egg whites, stiffly beaten
Icing 1 c. evaporated milk 1 c. sugar 1/2 c. butter or margarine 1 tsp. vanilla 3 egg yolks, slightly beaten

Directions:Melt chocolate in boiling water. Cool.
Cream butter and sugar. Add egg yolks, one at a time, and beat well after each addition.
Sift flour with soda and salt. Add alternately with buttermilk to chocolate mixture, beating after each addition until smooth.
Fold in beaten egg whites. Pour into three 8" or 9" greased layer pans. Bake at 350º for 30-40 minutes. Cool.
For icing: mix together all ingredients and cook about 12 minutes. Frost only top of cake and between layers. |

Notes: Everybody knew about Granny Ney's German Chocolate Cake! It was light and delicious, and usually the three layers were at least six inches high.
I figured this was a recipe that came over from "the Old Country" and was kind of disappointed when Granny informed me that no, she always used the recipe on the Baker's German Sweet Chocolate bar wrapper.
