Ingredients: 4 chicken breast 3-4 regular sized cans chicken broth 1 large can cream of chicken soup 1 can navy beans with juice 1/2 c. chopped onion 1 large clove garlic minced 2-4 cans chopped chilies (We like more so we do 4) 2 T. cumin or to taste 1-2 T. chili powder 1/2 t. cayenne pepper (or to taste depending on the heat you can stand) 2 T. oregano 1 t. onion or garlic powder salt & pepper if needed

Directions:Cover chicken breast with just enough water to cook them. Use this broth and as much canned broth as you need to get the consistency of chili you desire. Some people like thick chili and some thin.
Saute onion & garlic till tender. Add to some of the broth then stir in cream of chicken soup. Add more broth to get it to the the consistency you prefer. Shred chicken and add it and other ingredients to the broth. Add for broth if desired.
The measurements for the seasonings listed are just a suggestion. Season to taste. We like a lot of cumin because that's what gives the chili flavor. Simmer for at least 30 minutes. Taste again and add more seasonings if needed.
Serve with grated cheese, sour cream, jalapeņo peppers and totrilla chips. |

Notes: This is one of those foods that is better the longer it sits and the flavors have time to blend. It's a great "make ahead" recipe. It also freezes well if you want to make it way ahead.
