1 can peach slices
148 grams all purpose GF flour (1 cup)
1 tsp baking powder
1/8 tsp salt
1 cup white sugar
1/2 cup soft butter
1/3 cup greek yogurt
2 tbsp milk
1 tsp vanilla

Directions:
Directions:
Preheat the oven to 350. Butter and prepare an 8" square glass baking dish

Set a large sieve over a big bowl. Open the canned peaches and pour into the sieve to drain. Set aside.

In another bowl, mix the flour, baking powder and salt. Set aside.

In a third large bowl, cream together the 1 cup of sugar, butter and greek yogurt. Mix in the milk and vanilla until smooth. Gradually add the flour mixture and mix well.

Stir in the drained peaches to the cake batter. Use a spatula to scrape the batter into the baking dish and spread it out evenly.

Bake for 45-50 minutes or until the cake is puffy and golden. Cool until just warm before eating. Scoop out the cake and serve with vanilla ice cream, if you like.

Serves up to 8 if eating with ice cream.
