1/2 c. oil
1/2 c. flour
1 large onion diced
5 cloves garlic, sliced
4 stalks celery, chopped
2 green bell peppers, chopped
kosher salt
2 bay leaves
2 tsp. fresh ground pepper
2 tsp. cayenne pepper
1 1/2 tsp. smoked paprika
1 1/2 c. sliced okra
12 oz. turkey or pork Andouille sausage, sliced
6 c. chicken stock
2 lb. raw shrimp, peeled and deveined
3 scallions sliced
1 tbsp. butter

**cooked white rice & hot sauce for serving

In a large pan make a roux. Warm oil and whisk in flour over medium heat. Turn on really low and cook 30-40 minutes stirring constantly until rich in color and medium brown the color of peanut butter. Be sure to keep stirring so mixture toasts and doesn't burn.

Add chicken stock, onion, garlic, celery, peppers, salt and cook for five minutes. Add bay leaves, black pepper, cayenne, paprika, okra and sausage. Increase heat and bring to a boil. Then reduce heat to bring to a low simmer for 10 minutes. Stir in shrimp until just cook through. Stir in scallions and butter. Salt and pepper to taste and serve over rice.
