1 1/2 cup flour---
1 cup flour
1/2 tsp. baking soda
1 tsp. salt
1/2 cup shortening
2 eggs
1 or 2 very ripe banans
1/3 cup milk
1 teaspoon lemon juice
1/2 cup chopped nuts

FROSTING
2 Tbsp. butter
2 cups powder sugar
1 teasp vanilla
1/2 small banana

Directions:
Directions:
Cream the shortening and add the sugar
add the egg and beat.
Add the rest of the ingredients and mix well.
Put in a 9x13 cake pan and bake at 350º for 25-30 minutes
Cool completely and frost

Good friend and partner at The Farm Sally Schopf gave me this recipe. You can freeze your ripe bananas in their skin and thaw them for a few minutes to use them
