4 slices bacon chopped
1 (2-lb) beef brisket
Emeril's Essence (recipe in Notes below)
2 large onions thinly sliced
4 cloves garlic smashed
2 tbsp. tomato paste
1 12 oz. can beer (not dark)
1 c. beef broth
2 carrots in 1/2 " thick pieces
1 potato cut into 1 inch pieces
1 turnip cut into 1 inch pieces

Preheat oven to 350º. In a Dutch oven cook bacon in one tbsp. of water over medium heat until crisp. Transfer to paper towel to drain. Pat brisket dry and season with salt and pepper and Essence. Brown in bacon fat. Remove from pan. Add onions to pan and cook until softened. Add garlic and tomato paste. Cook about one minute and then add beer, broth and bacon to pan. Bring to a boil and reduce heat. Add the brisket to the pan, cover and put in oven. Cook 2-3 hours. Add carrots, potatoes and turnips last 45 minutes.

Remove dutch oven from oven. Transfer brisket and vegetables to plate and cover. Bring sauce to boil until thickened. Season to taste. Slice the brisket and serve with buttered noodles (optional.)
