1/2 chicken breast or more per serving
1 egg beaten
8 oz. sliced mushrooms
4 oz. muenster cheese
1 cup chicken broth
sprinkle of lemon juice
2 Tablespoons butter
1/2 cup Italian Bread Crumbs

Directions:
Directions:
Cut chicken into bite size pieces, roll in egg then in bread crumbs. Saute in butter. Place in a casserole. Add mushrooms, broth and lemon juice. Top with about 2 T . more bread crums and the muenster cheese.

Bake at 350º for 1 hour. Cover the casserole for the first 15 minutes

My friend of many years, Flo McGurk gave me this recipe. She made wonderful special rice to serve with it. Flo was from Iran. My rice was not so hot so kI served Klusky noodles with it. I have used this recipe a lot.
