1 lb. bulk pork sausage
2 (15 oz.) cans Italian tomato sauce
1 (6 oz.) can tomato paste
1/4 c. water
1/2 Tbsp. brown sugar
1 (15 oz.) container ricotta cheese
3 c. shredded mozzarella cheese
1 egg
1 tsp. parsley flakes
12 manicotti noodles (cooked and drained)
Grated Parmesan cheese

Directions:
In large saucepan, brown sausage. Drain, remove half and set aside in bowl. Stir in tomato sauce, tomato paste, water and brown sugar. Simmer for 15 minutes. In medium bowl combine remaining sausage, ricotta, 2 cups of mozzarella, egg and parsley.

In 13x9" baking dish, pour half of sauce mixture. Stuff manicotti noodles with ricotta mixture and place in dish on top of sauce. When finished, pour remaining sauce over the filled noodles. Top with remaining cup of mozzarella cheese and sprinkle with parmesan. Bake uncovered at 350º for 20 minutes.
