3 lb package of centercut pork loin
1 bag little petit carrots
1 package mushrooms
Olive oil
1 to 2 green bell peppers
1 medium size yellow onion
1 16 oz fire roasted diced tomatoes
Chupacabra rub - a fine meat rub and season-all - found at HEB

Directions:
Directions:
Tear 2 ft of foil
Cut up all vegetables.
Take chopped bell peppers, onion, carrots, and mushrooms by the handful and put on foil.
Take pork loin , rub down with olive oil and chupacabra seasoning .
Place the pork loin on top of vegetables
Open can of tomatoes and pour over pork loin.
Take remaining vegetables and place on top of pork loin.
Cover entire loin with foil.
Note: you may need to double wrap the pork loin.

Bake at 425º for 1.5 hours.

Remove pork loin.
Drain the juice from the vegetables.
Pour the juice over the pork loin to keep moist.
