4 pork chops (1-inch thick, about 1.5 lbs.)
1.5 c. beef flavored broth
4 medium potatoes, quartered
4 small carrots, cut into one-inch pieces
2 small onions, cut into fourths
3/4 tsp. salt
1/4 tsp. pepper
chopped fresh parsley, if desired

Remove all visible fat from pork. Spray non-stick 12-inch skillet with cooking spray; heat over medium high heat. Cook pork in skillet about five minutes, turning once, until brown. Add broth, potatoes, carrots, and onions to skillet. Sprinkle with salt and pepper. Heat to boiling; reduce heat. Cover and simmer for about an hour or until vegetables are tender and pork is just slightly pink near the bone. Sprinkle with parsley to serve.
