6 oz. cake mix
1 extra large egg
¼ c oil
2 T water
STREUSEL TOPPING
2 t cake mix
1 T margarine
½ t cinnamon
1 T sugar
¼ c brown sugar

Directions:
Preheat oven to 350º. Mix all streusel ingredients together with fork until crumbly. Set aside. Place cake mix and egg in mixing bowl. Mix on low speed for 1 minute. Mix on medium speed for 3 minutes. Add oil and water while mixing at low speed for 1 minute. Scrape down sides and bottom of bowl with spatula. Mix additional 2 minutes on low speed. Place mixture into coffee cup. Bake for 16 to 20 minutes. Add streusel topping to cake before baking last 5 minutes.

This recipe came with a terra cotta "baker's pot", which Janet no longer has, but this recipe can be baked in a coffee mug large enough to contain the batter and streusel with room for the cake to rise without spilling over. NOTES: Most earthenware mugs are oven safe. Ceramic and porcelain will usually work. Mugs are usually baked and glazed at a hotter temperature than this recipe requires, but the best mugs to use are stamped "oven safe" on the bottom. If the mug is NOT stamped, and is made in another country, then it is probably NOT a safe choice. Most earthenware and pottery from Mexico is NOT oven-proof. Because it's made by Corningware®, Corelle™ which is manufactured to go into the oven, may be the best choice. Corelle's website states the following, "Livingware™ 11-oz Stoneware Mug is dishwasher, refrigerator, microwave and pre-heated conventional oven (up to 350° F) safe." As a final note, NO glass or china should be baked at 400º or more for safety reasons.
