Mexican corn tortilla layered Casserole Recipe

Ingredients: Corn tortillas chunky salsa of your choice, large bottle 1 lb ground beef 2 cloves garlic, minced 1 pkt taco seasoning small can of mild green chiles, ripe olives (optional items) 1/2 cup chopped onion 2 cups cooked white rice 8-12 oz shredded cheese (your choice) 1 large can of black beans (can substitute with other types of beans)

Directions:1) Brown the ground beef, and onions together; add garlic 2 minutes prior to adding the taco seasoning ; simmer mixture with water according to directions on seasoning pkt. 2) Add the black beans (drained and rinsed). Set mixture aside. 2) Spray 9X9 pan with oil and line bottom of pan with uncooked corn tortillas, cutting them to fit. 3) Spread a generous layer of salsa over the tortillas, then spread half of the cooked meat, onions and beans over that. 4) Sprinkle the green chiles and black olives evenly over the beef mixture. 5) Spread 1 - 1 1/2 cups of rice for next layer. 6) Sprinkle 1/2 of the grated cheese over the rice. 6) Evenly distribute small spoonfuls of sour cream over the cheese. 7) Repeat all of the above layers a second time, except put the rice on top of the meat layer before putting the cheese on the top. |

Notes: Make sure to add enough of the salsa so that the casserole isn't dry. The sour cream also adds moisture. Serve with sour cream and/or guacamole. Very delicious!
