1 whole beef heart
6 whole cloves of garlic
salt and pepper to taste
1 c. water or beef broth

Directions:
Directions:
Take one whole beef heart. Rinse and pat dry. Cut slits in heart and insert a clove of garlic in each. Salt and pepper the heart. Put water in bottom of roaster. Put heart in roaster and cover. Cook at 350º until the internal temperature reaches 145º. Let rest at least 10 minutes before slicing the meat. Drippings make great gravy!!
