1 onion, chopped
3 ribs of celery, chopped
A large head of cauliflower, chopped
2 T butter
1 T olive oil
1 T dried thyme leaves

1 T butter
2 T flour

2 quarts chicken stock
1 c half & half/milk/cream

Directions:
Directions:
Saute onion, celery, and cauliflower in 2 T butter and olive oil.
Add salt and pepper and thyme.
Saute for 10 minutes.

Shove all the veggies to the side and add other tablespoon of butter and flour. Mix around for about a minute.

Add 2 quarts chicken stock. Boil 15 minutes.

Add half & half/milk/cream. Blend.

Serve with Parmesan or Romano cheese.
