Ingredients: Crust
9 oz. Oreo Cookies, about 20 ¼ C Sugar 6 T Butter, unsalted, melted Filling 2 lbs. Cream Cheese, softened 1 ½ C Sugar, granulated 1 T Almond Extract 4 Eggs, room temperature 5 – 8 Almond Joy Candy Bars, cut into ½ inch pieces

Directions:1. Preheat oven to 350 degrees. 2. Finely process cookies and put in 9 inch spring form pan. 3. Add sugar and melted butter, stir. 4. Press crust evenly on bottom and halfway up side of in 9 inch spring form pan. 5. Bake at 350 degrees for about 10 minutes, until crust is set. 6. Beat cream cheese and sugar together until smooth. 7. Add extract and eggs one at a time, beating after each addition. 8. Fold in candy bars. 9. Pour filling into crust and bake at 350 degrees about 1 hour or until middle is set.
Variation: Cookies & Cream Cheesecake 1. In the filling, substitute vanilla extract for almond extract. 2. Add 1/4 cup heavy cream 3. Substitute Candy Bars for 9 ounces of Oreo Cookies.
Hints: 1. Place a pan filled 1 inch of water on lower rack in oven during baking. 2. Chill cheesecake completely before removing from pan. 3. To remove from pan, cut around cake with dull knife. 4. Slide very large knife under crust and loosen all around before transferring to serving plate. 5. Cut cheesecake with large knife, dipping the knife in hot water before each cut. . Yield: 12 – 16 Servings |
