1 lb. can sauerkraut
1-2 can pimentos, diced (opt.)
1/2 c. chopped celery
1/4 c. vinegar
1/2 green pepper, diced or chopped
1/3 c. sugar
1 carrot, grated
1/4 tsp. salt
2 T. grated onion
1 tsp. celery seed (opt.)

Directions:
Directions:
Heat the vinegar, sugar, salt a and celery seed until the sugar dissolves. Pour over other ingredients and mix well. Put in a tightly covered bowl or jar. Refrigerate overnight. This salad keeps well in refrigerator.
