1 small onion chopped fine
2 ribs celery chopped fine
3 cloves garlic chopped fine
3/4 cup butter
1 cup flour
2 cups milk
6 cups chicken broth
6 cups cooked diced/shredded chicken breast
12 oz Velveeta cheese
1 tsp cayenne pepper
1 tsp salt
1 tsp black pepper
1 cup Franks hot sauce
Bleu cheese crumbles

Directions:
Directions:
In a 2-quart saucepan over medium heat saute onions, celery, and garlic in butter until tender. Stir in flour; slowly whisk in milk and broth. Stir in chicken, cheese, and seasonings; simmer over low heat, stirring occasionally, until cheese has melted. Finally stir in hot sauce. Serve with bleu cheese crumbles.
