1 cup lukewarm milk
3 cups unbleached flour
2 Tbsp. butter, room temperature
2 1/4 tsp. yeast
1 tsp. salt
2 Tbsp. honey
2 medium size bananas, mashed up

In large mixing bowl or in bowl of electric mixer, combine warm milk, honey, butter and yeast; allow to proof. Then add all bananas, add flour one cup at a time. Mix until it is a shaggy dough. Knead the dough by hand (10 minutes) or by mixer (5 minutes) until it is smooth. May need to add more flour to get it to a smooth round dough. Place dough in a lightly greased bowl and allow it to rest for 1 hour.

About 10 minutes before the end of the first kneading cycle, check the dough and adjust it consistency as necessary with additional flour or water the finished dough should be soft and supple.

Transfer the dough to a lightly oiled work surface and shape it into a log. Place the dough in a lightly greased 8 1/2" x 4 1/2" loaf pan. Cover the pan with lightly greased plastic wrap, and allow the dough to rise for 45 minutes to 1 hour until it is full and rounded. Bake the bread in a preheated 350º oven for 35-40 minutes until an instant read thermometer inserted into the center registers 190º. If the bread appears to brown to quickly tent it with aluminum foil for the final 10 minutes of baking.
