DOUBLED
5 lb Potatoes (red skinned or Idaho)
2 C Helmann's Mayonnaise
1 C Chopped Onion
3 Stalks of Chopped Celery
4 TBSP Apple Cidar Vinegar
1 TBSP Salt
1/2 TSP Pepper
1 TSP Dry Mustard
2 TSP Sugar
9 Hard Boiled Eggs

Directions:
Directions:
Boil potatoes in salted water until fork comes out easily.
Boil eggs to hard boiled, peel and cut into slices.
While potatoes cooking chop onion and celery.
Mix mayonnaise, vinegar, salt, pepper, dry mustard, and sugar with a wisk.
Once potatoes are done drain the water and cut into small cubes while potatoes are still warm. If using Idaho potatoes the peels will need to be removed.
Mix the potatoes, onion, celery and mayonnaise mixture together. Once these ingredients are incorporated add the hard boiled egg slices.
Chill in refrigerator in an airtight container.
Can be made the night before. Best served cold.
