"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 1/2 c sugar
1/4 tsp salt
1/2 c pineapple Juice
1 T lemon juice

Directions:
Sift flour and baking powder together 4 times.

Beat egg whites and salt until stiff but not dry. Add 3/4 c sugar, about 2 tablespoons at a time beating well after each addition.

Beat egg yolks and add remaining sugar and fruit juices and beat until thick enough to hold a soft peak. Fold flour about 1/4 of it at a time into yoke mixture, folding just enough to moisten flour. Fold in egg white mixture, pour into ungreased tube pan(angle food pan). Cut through batter with spatula to remove large air bubbles. Bake in slow oven 325 degrees for 50 to 60 minutes. Invert pan and let cake hang in pan to cool.
