2 T Canola Oil
1lb Polish Sausage cut in 1/3 slices
1 small onion
1 15oz can black eyed peas (Goya Brand)
1 14oz can chicken broth
1 t minced garlic
1 can chopped tomatoes with basil, garlic and oregano
1/4 c orzo
1/2 t black pepper

Directions:
Directions:
Heat canola oil; lightly brown sausage rounds; sauté chopped onions; put drained, rinsed peas in pot; add the chicken broth, minced garlic, tomatoes, orzo and black pepper. Cook for approximately 1 hour.
Can be cooked in slow cooker for 2 1/2 to 3 hours on high.
Serve with cornbread or crackers.
