Select small, young beets, washed.

2 cups sugar
2 cups water
1 1/2 cups vinegar
3/4 tsp cloves
1 tsp allspice
1 Tbsp cinnamon

Directions:
Directions:
Cook beets until tender; dip into cold water. Peel skin.
Mix remaining ingredients in medium saucepan, bring to boil over medium-low heat. Add beets and simmer for about 5 minutes.
Pack into sterilized jars and seal.

Grandpa Larson loved these! Recipe actually came from Norma Wagan. Jelmar and Norma were friends of Grandma and Grandpa in Wisconsin.
