Ingredients:  
1/2 Red Onion, thinly sliced
2 Tbsp. Lemon Juice (for Onions)
1/4 cup Lemon Juice
2 tsp. Sugar
Salt to taste
1 Jalapeno Chile ( seeds removed) chopped
1 cup Cilantro, lightly packed
1/2 cup olive Oil
4 Avocados, thinly sliced

Directions:
Directions:
In small bowl, combine Onion with 2 Tbsp. Lemon Juice, 1/2 tsp Sugar, & 1/4 tsp. Salt. Toss to mix, let sit for about 1 hour. (Will keep in Frig. (covered) for 1 day).
Dressing:
In blender, combine 1/4 cup Lemon Juice, Jalapeno, Cilantro, 1 1/2 tsp. Sugar & Salt to taste. Blend until smooth, while running add Oil.
Drizzle over Avocados, top with Onions.
