6 eggs
1 quart milk
Sugar to taste

Put eggs in blender to mix well for a few minutes
Place in medium saucepan, add milk and sugar to taste
Put on low setting and stir constantly until it looks like cottage cheese (about 45 minutes)
The milk will start to separate.
Take a spoonful and smash it against the side of the pot, if it forms a ball, it is done
If scorching occurs do not scrape pan, mix lightly. This is normal
In a large strainer, place a piece of cheesecloth, or light dish towel
Pour mixture in and let it drain
Let it cool slightly until you can squeeze out excess liquid to form a ball
Tie with a string and hang from door knob or cabinet to drain further for about ½ hour until liquid is gone, be sure to place a pan under it to catch the liquid
