3 1/4 cup flour
1 3/4 cup sugar
3/4 cup Crisco
1 tsp salt
1 1/2 cup milk-divided
3 1/2 tsp baking powder
1 tsp vanilla
3 whole eggs or 4 egg whites

Icing
3 TBS melted butter
1 tsp vanilla
1 lb powdered sugar
milk
coconut

Directions:
Directions:
* Combine flour, sugar & Crisco; beat for 2 minutes.
* Add salt & 3/4 cup milk; beat for 1 minute.
* Add baking powder; beat for 1 minute.
* Add additional 3/4 cup milk, vanilla & eggs; beat for 2 minutes.
* Divide between two 9" greased, floured layered cake pans.
* Bake @ 375ºF for 25-30 minutes.

Icing
* Mix together butter, vanilla, powdered sugar & milk to desired consistency.
* Needs to be thick enough to stay on the layered cake but not so thick you can't spread it easily.
* Place one cake on plate & put icing on top of it. Then place other cake on top of that. Ice top & sides of 2 layer cake. Top with shredded coconut.
