1lb chuck stew beef
1/2 tbsp salt
1/2 tsp pepper
1 tbsp vegetable oil
1/2 cup onion, chopped
2 cloves of garlic, minced
1/4 cup of beef broth

1 1/2 cups beef broth
1 cup red wine
1 package Mrs. Dash stew seasoning
2 tbsp tomato paste

1 cup carrots, chopped
1 cup celery, chopped
1 cup mushrooms, sliced
1 cup potato, chopped

Directions:
Directions:
Combine the beef, salt, and pepper.
Press "Sauté" to heat the pot for cooking.
Pour oil into the pot, add the meat to the pot and to sear it. It's fine if some bits of meat stick to the bottom of the pot.
Remove the beef with tongs and set aside.
Add the onions and garlic to the pot and allow them to brown.
Once the aromatics are soft, pour in 1/4 cup of beef broth and scrape the bottom of the pot until all the stuck-on bits of meat and onions have been cleared away and are floating in a thin layer of broth.
Return the meat to the pot and pour in another 1 and 1/2 cup of beef broth, 1 cup of wine, Mrs. Dash seasoning, and 2 tbsp tomato paste. Stir.
Close the lid and turn the pressure valve away from you to seal pressure - press the "Meat/Stew" button and decrease the time to 20 minutes by pressing the "-" button. Walk away! The alarm will go off when it's done.
When the alarm goes off, wait 10minutes before you release the pressure seal and open the pot. This extra time in the pot is great for flavour.
Once you open the lid, add all the remaining vegetables and stir.
If more broth is needed at this point, add the last 1/2 cup of beef broth.
Close the lid and pressure valve again, press the "Manual" button, and reduce the time to 12 minutes.
When the alarm goes off to indicate that the time is up, release the pressure manually by carefully turning the knob on the lid towards you and open the pot - no need to wait any longer.
