20 oz. cheese tortellini
1/2 cup virgin olive oil
1/4 cup lemon oil (or less)
1/4 cup red wine vinegar
2 T. parsley
1 tsp. oregano, dried
1/2 tsp. salt
1 pound baby spinach
6 oz. container crumbled feta
Roasted pine nuts
1/2 red onion, slivered

Directions:

Cook tortellini according to package. Combine oil through salt. Toss with tortellini (I put into a large ziploc bag at least 2 hours or overnight). Mix-toss everything together just before serving.
