Self raising flour (2 cups)
Grated cheese (1 cup)
Grated zucchini (1 large)- squeeze the juice out of it
Flat leaf parsley (tbsp chopped)
Buttermilk (3/4 cups)
Eggs (2)
Vegetable oil (1/4 cups)

Mix flour, cheese and zucchini.
Season
Whisk together wet ingredients in a separate bowl
Add wet to dry
Mix until combined, do not over mix
Spoon into pan
Bake for 25 mins
Remove and cool
