1 lb. Fresh Asparagus
1 medium Onion (finely diced)
1 T. Butter
3 cups Chicken Broth (adjust quantity to taste)
1 medium Potato (peeled and diced)
1 Celery Rib ( chopped) or 1 t. Celery Seed
1 cup Cream (or 1/2&1/2)
Salt
Pepper

Directions:
Directions:
1. Chop Asparagus stalks into 1" pieces.

2. In a sauce pan, over medium heat, saute onion in butter for 3 to 5 minutes or until translucent.

3. Add chicken stock, asparagus, potato, celery, salt and pepper

4. Cover and bring to boil.

5. Reduce heat to low or simmer for 12 to 15 minutes or until vegetables are soft.

6. Remove from heat and cool.

7. Place 1/2 of the soup in the blender container.

8. Cover and blend on High Speed for 20-30 seconds or until very smooth.

11. Return blended soup back into saucepan to heat. Do Not Boil
