4 (4 oz) fillets of sole/halibut
Flour for dusting
2 tbsp olive oil
4 tbsp unsalted butter
1/4 c. small capers
2 tbsp lemon juice ( or sherry vinegar)
2 sprigs fresh parsley
salt & pepper to taste

Directions:
Directions:
Dust the fillets w/ the flour.
Heat olive oil in large skillet. Brown the fillets 1 min. on each side. Remove fish to heated platter & keep warm.
In the same skillet, add the butter and capers and cook quickly over high heat until the butter becomes nutty brown.
Add the lemon juice (or vinegar), parsley , salt & pepper. Stir well and pour over the fillets. Serve immediately .
Good with steamed red potatoes.
