1/2 cup soy sauce 1/4 cup murin or sweet cooking wine 2 Tbs sugar 3 coins (1/4 inch thick) fresh ginger or tsp powder 1 crushed garlic clove 1/2 tsp onion powder 1/2 tsp black pepper 2 Pounds of trimmed jerky

Preheat oven to 200 degrees when ready to cook. Marinate all ingredients in a resealable plastic bag for three days in the refridgerator. Shake off excess marinate placing strips 1/4 to 1/2 inches apart on oven rack. Check every thirty minutes until appropriate dryness is reached. Store dark place dry.
