Ingredients: 3 large peeled potatoes 1 large onion 2 beaten eggs 1 tablespoon Matuzo Meal or flour ( this may be a bit more or less, the batter needs to be loose.) Salt to taste Canola oil for frying paper towels for blotting apple sauce sour cream or Greek yougart

Directions:Use a food processor to grate the potatoes and the onions. Alternatively you can grate them using a grater. Make sure batter is smooth.
Beat than mix in eggs.
Heat the pan of oil that is about 1 inch deep. We generally have 2-3 pans of oil going at the same time when making a big batch.
When oil is incredibly hot, drop in a heaping tablespoon of batter and gently press down with a spoon or spatula. An average pan can hold about 4 at a time. Flip once cook until golden brown and crunchy around the edge, but still chewy in the middle.
Place on a dish with paper towels to drain the oil. Change the paper towels frequently.
Serve immediately with choice of sour cream, Greek yougart and apple sauce.
