1/2 cup (1 stick) unsalted butter 1/2 cup packed brown sugar 1 large egg 1/4 cup molasses 1 Tbs peeled, finely grated fresh ginger 2 cup whole wheat pastry flour ord flour 2 Tbs unsweet cocoa powder 1 tsp baking soda 1/2 Tbs ground ginger 1 tsp cinnamon 1/4 tsp ground cloves 1/2 tsp salt 1/3 cup sugar for rolling cookies

1. Position oven rack in middle of oven, preheat oven to 325 degrees. Butter 2 cookie sheets or line with parchment paper.
2. Place butter and sugar in a bowl, beating well. Add eggs, molasses, and fresh ginger- beating smooth.
3. In another bowl, combine flour, cocoa, soda, spices and salt. Whisk to blend. Add dry mix to mixing bowl, mix on low to combine.
4. Spread sugar on a flat surface. Form balls with dough about 1 inch. Roll balls in sugar and place on cookie sheets 2 inches apart. Do Not Flatten.
5. Bake until cookies are fragrant and tops are cracked, 10-13 minutes. Cool in pan 5 minutes, transfer to wire rack to cool completely. Store air-tight upto 7 days.
