1/2 cup butter or margarine 3/4 cup finely chopped carrots 1/2 cup fine chopped celery 1/4 cup finely chopped onions 1 cup quick-mixing flour 1/2 tsp paprika 1/8 tsp black pepper 1/8 tsp ground red pepper 3 cups chicken broth (32 oz) 1 cup whipping cream 4 cups shredded cheddar cheese (16 oz) 1 12 oz can of beer.

1. In a 4 qt. Dutch oven, melt butter over med heat. Add carrots, celery, onions; cook about 10 minutes, occasionally stirring, until celery and onions are transparent.
2. Stir in flour, paprika, black pepper, and red pepper. Add broth; bring to a full rolling boil over med. Boiul 1 minute or there abouts.
3. Reduce heat, stir in whipping cream and cheese. Heat until all chese has melted, stir occasionally. Next, pour in beer. Can serve with chips or popcorn.
