1 can (14 oz) sour cherries, drained and chopped, saving juice for later 21/2 Tbs tapioca 1 cup sugar 1/2 cup saved cherry juice 1/4 tsp almond extract 1/4 tsp salt Red food coloring if desired 2 9 inch pie crusts, unbaked nutmeg to taste 2 Tbs (1/4 stick) butter, cut into small chunks cinnamon to taste

1. Preheat oven to 325 degrees
2. Combine cherries, tapioca, sugar, cherry juice, almond extract, salt and food coloring in a mixing bowl and let stand a few minutes.
3. Pour into unbaked crust that has been lightly dusted with nutmeg. Dot with butter.
4. Cut second crust into strips and make a lattice top crust. Sprinkle generously with cinnamon and sugar.
5. Bake until bubbly and nicely browned.
