1 cup unsalted butter
2 cups all-purpose flour
3/4 teaspoon baking powder
pinch salt
1 egg yolk
3/4 cup sugar
1 tablespoon vanilla extract
1/4 cup berry jam (strawberry, raspberry, blueberry)
Powdered sugar to dust tops of cookies

Directions:
Directions:
1. Preheat oven to 325º.
2. Prepare two baking sheets with parchment paper, or silicone baking mats. Do not butter as it will make the cookies too greasy.
3. Melt butter in a small pan on medium heat. Continue to cook butter until it begins to brown (approx. 15 minutes).
4. Pour butter into a medium bowl, and cool for around 5 minutes.
5. In another bowl, whisk together the flour, baking powder and salt.
6. To the dry mixture, add egg yolk, sugar, and vanilla, adding in the cooled brown butter mixture last.
7. The dough should be slightly crumbly and dry, resembling wet sand . 8. Scoop dough with a small teaspoon, rocking spoon back and forth against the inside of the bowl to make spoon shaped cookies.
9. Bake cookies for 12- 15 minutes until lightly browned.
10. Cool Completely
11. after cooled, spoon jam onto each cookie and sandwich together with another cookie.
12. Dust with powdered sugar on top of each cookie. Enjoy.
