25 large peeled tomatoes (more/less)
4-5 Peppers
3-5 onions
1 cup diced Jalapeno peppers
- can use 16 fresh jalapeno peppers (leave seeds in seven) - or
can use 2 cans diced jalapenos instead
1 can green chili peppers

Garlic and cilantro could also be added if you like.

3 Tbsp. Salt 1 can Italian tomato paste
1 Tbsp. Sugar
3/4 cup vinegar
Dash of pepper

Cut tomatoes into fourths or eighths depending on how large they are.
Put the tomatoes in a heavy cooking pot. Can also be divided into two pots which helps them cook a little faster. Cook the tomatoes about an hour. Some of the excess clear liquid can be drained if you do not want to wait for them to cook down more. Then peppers, onions, and jalapenos are added along with 3 Tbsp. salt, 1 Tbsp. sugar, 3/4 cup vinegar, dash of pepper. You might also wish to add garlic and cilantro.

Cook at least another half hour to an hour depending on the desired thickness.

If the salsa seems to be taking a long time to thicken (which it does), adding a can of the Italian tomato paste at the end will help the thickening process.

If you divide the tomatoes into 2 pots, you can just use less (or half) of the salt, sugar, vinegar. And, you can either put one can of the Italian paste in both or divide between the two. It will work either way.

This will probably take a minimum of 2 hours - probably longer. But, it's worth it!!! Enjoy
