Make the syrup the night before
1 pound frozen fillo dough, unthaw overnight in refrigerator
You will need to cut fillo dough to fit your pan, get a sharp knife and cut through all layers at once
Keep the fillo covered with cloth while you are working with it
1 pound melted butter, may need a little more

FILLING:
6 cups ground nuts
1 ½ tsp cinnamon
Heaping ¼ cup brown sugar
Butter pan, you will need a pan bigger than 13x9 about 15x17
6 sheets of fillo dough on bottom, brush butter between each sheet
Add layer of nuts, not to thick
Place 2 sheets fillo dough after each layer of nuts, brushing each with butter
6 sheets of fillo dough on top, brushing butter between each layer
Put in freezer for 10 minutes
Cut diagonally before baking

Bake 300° for 1 hour 45 minutes

2 cups water
2 cups sugar
1/8 cup light corn syrup
1/8 cup honey
1 stick cinnamon
1 TBSP lemon juice
Combine and boil for 5 minutes
It will not thicken
The syrup is better if you make it the night before and let it cool
DO NOT REFRIGERATE

Pour over the hot pastry
Let cool
